    In a 9x9 baking dish, layer half of the ravioli onto the bottom of the dish.

Cadbury Creme Egg Dessert Lasagna

I first made our Cookies & Cream White Chocolate Lasagna last year, and I’ve been hoping for an excuse to make it again! I think Easter is the perfect occasion for a decadent no-bake chocolate dessert, so I tweaked my original recipe in homage to one of our favorite holiday candies.

This Cadbury Creme Egg Chocolate Lasagna is perfect to prepare ahead of time, or while the oven is busy cooking your Easter supper.

It’s also a really easy layered dessert for the kids to help prepare, as there is nothing really technical or complicated about it. It’s four simple layers of easy, luscious deliciousness!

Of course, if cream eggs aren’t your thing, substitute your own favorite Easter Candy – Mini Eggs, mini Chocolate Rabbits – even jelly beans!

I hope you guys had an awesome Christmas? We spent Christmas Ever with Pete’s family, my parents and little brother and some really good friends and then went to my moms for Christmas Dinner with just my huge family (I am the third of 4 children- plus spouses and grandchildren). We ate a disturbing amount of food, drank a very disturbing amount of red wine and ended the night with a drunken reading of a play my nephew wrote for school (he won an award for it!) we all got a part and pulled out our best Irish accents. I have to say, I haven’t laughed that hard in probably years. Then we all passed out on the living room couches and had the teenagers drive us home. It is very handy to have a bunch of teenagers with licenses!

And now I just am keeping the ball rolling with the serious eating I guess. (As soon as we get to January a massive smack down is happening by the way!) Lasagna. Oh heavenly lasagna. Because I made this recipe twice this last week, I just had to share it with you.

Last Monday, Pete and I went out with our friends John and Annie, and Annie who is Italian was talking about this incredible lasagna that she makes every year over the Holidays. While she was talking about it I was watching Pete eat lasagna at one of our favorite neighborhood restaurants (Crow) and basically was feeling really sorry for myself as I desperately was craving it. Before this last week, I hadn’t had lasagna in over two years due to the fact that it is pretty much made up solely of Gluten, Dairy and Eggs- my main allergy trifecta.

I will tell you what it is: the most wonderful thick meat and vegetable sauce layered with gluten free lasagna noodles, almond ricotta and spinach and a light fresh tomato sauce. That’s it. And the result is out of this world.

I made it Wednesday and then again on the 27th because all we are doing all weekend is lying around and watching movies and now, eating lasagna… You should try it ☺ NOTES: I made this once with boil first noodles and once with no boil noodles. BOIL them the old fashioned way. It makes a world of difference. The dry noodles don’t cook through easily and soak up all the sauce so it is a drier lasagna and the noodles are gummy- not cool. The boil first is awesome. This is what you do: You have your meat and veggie sauce you made, your almond ricotta/spinach mixture, your basic tomato sauce and your noodles (I photographed the no boil variety- but please see my note above!) You take a 9吉 dish and first layer the basic tomato sauce and a layer of noodles on top. Then a thick layer of meat sauce and another layer of noodles. Next comes the ricotta and more noodles on top. One more thick layer of meat sauce and more noodles. Top those with basic tomato sauce. You will have some extra sauce- reserve it to for after the lasagna is baked .

Bake at 400 with foil on top for 30 minutes, slice and serve.

  • For the Meat Sauce:
  • 2 cups finely chopped/minced onion
  • 1½ cups finely chopped/minced celery
  • 1½ cups finely chopped/minced carrots
  • 3 cloves finely minced garlic
  • 2 bay leaves
  • 10 ounces hot Italian sausage (out of the casing)
  • 1 pound lean ground beef
  • 6 ounces tomato paste
  • 28 ounces crushed tomatoes
  • 1 tablespoon dried oregano
  • 1 cup loosely packed basil, chopped
  • For the Spinach Ricotta:
  • 10 ounces thawed spinach, dry
  • 1 pound almond ricotta (I use kite hill brand)
  • ¼ cup aquafaba (canned garbanzo bean liquid)
  • kosher salt
  • For the Basic Tomato Sauce:
  • 2 tablespoons olive oil
  • 1 clove garlic, chopped
  • ½ yellow onion, chopped
  • 28 ounces crushed tomatoes
  • kosher salt
  • 2 10-ounce boxes of gluten free lasagna noodles (I usually have a few noodles left over).
  1. Preheat the oven degree to 400 degrees.
  2. For the Meat Sauce:
  3. In a large heavy pot over medium high heat, add the olive oil, onions, garlic, carrots and celery and the bay leaves and let cook for 5-7 minutes until softened.
  4. Add the sausage and the ground beef and break up as you cook through another 5-7 minutes.
  5. Add the tomato paste and the large can of crushed tomatoes, then add the dried oregano and the fresh basil and stir in. Put a lid on the sauce and turn the heat to low. Cook at least 20 minutes and up to several hours on lowest heat.
  6. For the Ricotta:
  7. Take the 10 ounces of thawed frozen chopped spinach and squeeze out any moisture. I like to use paper towels to do that to get it really dry. Add to a bowl with the almond ricotta and the garbanzo bean canned liquid and mix well. Season to taste with kosher salt. Set aside.
  8. For the Basic Tomato Sauce:
  9. In a medium sauce pan over medium heat add the olive oil and the garlic and onion. Saute for a few minutes and then add the tomatoes. Cook for 3 minutes and then add to the jar of a blender. Puree on high until smooth and add back to the sauce pan.
  10. For the Noodles:
  11. Boil in salted water until al dente and then rinse well with cold water.
  12. To Assemble:
  13. You take a 9x13 dish and first layer the basic tomato sauce and a layer of noodles on top.
  14. Then a thick layer of meat sauce and another layer of noodles.
  15. Next comes the ricotta and more noodles on top.
  16. One more thick layer of meat sauce and more noodles.
  17. Top those with basic tomato sauce. You will have some extra sauce- reserve it to for after the lasagna is baked.
  18. Bake at 400 with foil on top for 30 minutes, top with the hot extra tomato sauce, slice and serve.

Fresh Egg Pasta for Lasagna

Here is Domenica Marchetti’s go-to, five-ingredient pasta recipe, not only for lasagna sheets, but for many other pasta shapes, including ravioli. Be sure to add the lesser amount of all-purpose flour (2 cups) to the food processor to mix the dough at the start you can always knead in more as needed it’s much easier to work in more flour than to add liquid if the dough is too stiff or dry.

A pasta rolling machine is helpful here the author uses a hand-cranked Marcato Atlas machine.

Make Ahead: The pasta dough needs to rest for 20 to 30 minutes. The pasta is best used the same day it is made.

When you scale a recipe, keep in mind that cooking times and temperatures, pan sizes and seasonings may be affected, so adjust accordingly. Also, amounts listed in the directions will not reflect the changes made to ingredient amounts.

Tested size: 1 servings pound enough for 1 large 9-by-13-inch lasagna or 2 smaller pans

Combine 2 cups of the all-purpose flour, 1 tablespoon of the semolina flour and the salt in a food processor pulse to incorporate. Pour in the eggs and 1 tablespoon of the oil. Pulse just long enough for the mixture to resemble small curds. Pinch together a bit of the mixture it should form a soft ball. If it seems dry, add the remaining tablespoon of oil and pulse briefly to incorporate. If the dough seems sticky, add more flour, a tablespoon at a time, and pulse to incorporate.

Sprinkle a little of the remaining all-purpose flour on a clean work surface and turn the dough mixture out onto it. Bring it together to form a rough mass and knead for several minutes, until smooth, incorporating only as much flour as necessary to form a firm, smooth ball. Wrap the dough tightly in plastic wrap and let it rest for 20 to 30 minutes.

Set up a pasta-rolling machine or a mixer with a pasta-roller attachment, with the rollers on the widest setting. Dust the work surface around the machine with semolina and keep more on hand for sprinkling on the dough as needed.

Cut the dough into 4 equal quarters and rewrap 3. Flatten the remaining piece of dough and feed it through the machine. Lay it on the work surface and fold it in thirds, like a business letter. Sprinkle with a little semolina and feed it through the rollers again. Continue to fold and feed the dough through the widest setting two more times. Move the roller setting to the next narrower notch and feed the dough through this setting twice. Continue to pass the dough through the rollers twice on each setting until you have a strip that is about 28 inches long and about 1/16-inch thick — setting #6 on a Marcato Atlas hand-cranked machine. You should be able to see the shadow of your hand through the sheet.

Sprinkle a little semolina flour on a baking sheet and lay the pasta sheets there as you work.

To cook the pasta, bring a large pot of water to a rolling boil over high heat and salt generously (as in, 3 or 4 pinches of salt). Set a large bowl of ice water near the stove for briefly immersing the cooked parboiled lasagna noodles. Spread a clean tablecloth on a table or clean, flat surface near the stove.

Carefully drop in 4 or 5 lasagna noodles at a time, taking care not to crowd the pot. Boil for about 1 minute the noodles cook quickly and should be slightly underdone. Use a large skimmer to transfer them to the ice-water bath. Swish them around, then use the skimmer to transfer them to the tablecloth, where you will spread them out flat. Continue until you have cooked all the noodles. Use right away.

An Easier Way to Make Lasagna!

Growing up, my least favorite part about making lasagna was always boiling the noodles. Not only did it take time, but it left an extra dish to wash.

My first year of college, my good friend Mark shared his mom&rsquos lasagna recipe with me. She adds extra water to the sauce, lengthens the cooking time, and eliminates the need to cook the noodles ahead of time. Perfect!!

Some of you may be wondering &ldquoCan you really make lasagna without boiling the noodles?&rdquo Yes, you absolutely can! I actually use this method with every lasagna recipe I make. I love not having to boil the noodles. And you don&rsquot have to spend extra money for the fancy no-boil needed variety. Bonus!!

HOW TO MAKE NO BOIL LASAGNA

  • ground beef
  • garlic
  • spaghetti or marinara sauce (we like Bertolli tomato and basil)
  • water
  • cottage cheese (or ricotta cheese if you prefer)
  • parmesan cheese (I like freshly grated parmesan)
  • egg
  • parsley (I use dry, but fresh works too.)
  • mozzarella cheese
  • lasagna noodles

Start by making a simple with browned ground beef, garlic, and bottled spaghetti sauce. Adding some extra water to the sauce eliminates the need to boil the noodles.

Stir together two types of cheeses with some parsley and an egg. The egg helps bind the cheese mixture together so the lasagna is a little easier to slice. It also adds a rich flavor.

HOW TO LAYER LASAGNA

A layer of sauce in the bottom of the pan helps prevent the noodles or cheese sticking to the pan. Layer a third of the sauce, half of the noodles, half of the cheese mixture, and a third of the mozzarella cheese. Repeat sauce, noodles, cheese, and mozzarella layers. Finish off with the remaining sauce and mozzarella cheese.

Bake for about an hour or until the noodles are tender. I like to cover the lasagna with foil for the first 45-50 minutes, then remove the foil so the cheese browns on top.

For easier slicing, let the lasagna sit for at least 10 minutes before serving!

Why do you put eggs in lasagna?

The egg added in this recipe helps bind the cheeses together so that they don&rsquot ooze out when the lasagna is cut. Egg also adds a rich flavor.

Should I use cottage cheese or ricotta cheese in lasagna?

This is really a matter of preference. No one in my family likes the texture of ricotta cheese, so I always use cottage cheese. You can use whichever type you prefer. Cottage cheese is lower in fat (if you choose the low fat variety), so that is a bonus in my book.

How to store leftover lasagna?

Leftover lasagna is simply amazing. It will last for 3-5 days in the refrigerator if covered tightly.

A Great Freezer Meal

This lasagna makes a perfect make ahead meal. You can assemble it, cover it with two layers of aluminum foil, and pop it in the freezer. It will keep for up to three months. Let it thaw, then bake as directed, adding additional time if needed.
