An eggless chocolate cake for those people who are allergic to eggs. Made in a mug in the microwave, it's a quick fix for a chocolate cake attack!

London, England, UK

25 people made this

IngredientsServes: 1

  • 4 tablespoons plain flour
  • 2 1/2 tablespoons unsweetened cocoa powder
  • 4 tablespoons sugar
  • 1/2 tablespoons baking powder
  • 7 tablespoons Coca Cola®

MethodPrep:5min ›Cook:1min ›Ready in:6min

  1. Mix all ingredients together into an over-sized mug. This cake rises a lot so if you don't have a very large mug, I suggest you split the mixture into two mugs after mixing. Mix with a small whisk until no lumps remain.
  2. For one oversized mug, microwave for 1 1/2 minutes. Cake should have a dry surface and knife inserted should come out clean. You may want to reduce the time for two smaller mugs.

This cake rises a lot so watch out.

1 Minute Chocolate Mug Cake – Eggless

When you have an industrial oven at home and a big time cake lower …. all you want is to bake a cake every next day…lol. But who says cake baking is a whole day task …well, a 1 minute mug cake proves you wrong. Yes, you heard that right, it’s a super moist and spongy mug cake baked only in a minute. And the best part is that it doesn’t ask you to own a oven. All it need is just a microwave, which i guess everyone has in today’s home kitchen.

A perfect baking experience for all the freshers and new comers in the field of cake baking… blessing to the ones who fear to bake a cake. My son is big time chocolate cake lover (just like his mom…hehehe) So every next day he comes up asking a for a piece of a chocolate cake. Now the other side of the story is that he enjoys it only the first day… and it’s me who land up finishing the rest of the cake. So now you understand my pain…

So for all the sweet cravings and those midnight hunger cramps there is one simple solution… just run to the kitchen, take a mug and few handful ingredients and invest a minute to get a super soft and spongy microwave cake.

I know i might be sounding a lil too much and you must be finding it a bit unbelievable too, so without wasting any more time, let us just quickly check out the recipe …

Eggless Chocolate Mug Cake

To all the fathers out there, Happy Fathers Day. I hope Sunday brunch happened, and you are all full to the brim with hash browns and omelettes. I know that I am.

Which means that even though I want to make a cake as well, I don’t want to make one so big that it feels like we need to finish it all. And plus, my dad will only eat a little bit of said cake, so I would be forced (but oh so willing) to eat the whole thing. What’s a girl to do?

Indulge in my new obsession of course! After the peanut butter mug cake that I made two weeks ago, I have caught the mug cake bug, and have been making them far too often. I should put a warning label on these posts.

This Eggless Chocolate Mug Cake was so moist, and not as spongy as your average mug cake recipe. And as an added bonus, it can be made when you run out of eggs. Which somehow happens too often around here.

An added bonus of not having any eggs in the batter is that you can taste test it as much as you want without being worried about the raw eggs. That is a win win in my books!

I never thought one minute eggless chocolate mug cake in microwave comes out super spongy and soft. It can be made instantly within no time. Its really a one minute magic or wonder I would say. I tried this for the first time from this space. I did some changes in the actual recipe based on the ingredients I had in hand & gave it to Raksha as an evening snack as she loves to have muffins and cakes more than deep fried snacks. When I made this cake in one minute, she was very much surprised and happy to see a cake inside a mug which was new to her . She enjoyed it saying “Mumma its very soft & chocolatey”. I immediately made another batch for myself and Sendhil. We too loved it a lot.

To make this picture interesting, I prepared this cake in our personalised mug printed with our photographs . How is it . We took this snap last year during our kodaikanal trip . Do try this cake for your kids and you can make them do it by themselves. Its so easy that anyone can bake it . I hope u can try in pressure cooker too. What are you waiting for?? Rush into your kitchen and make this one minute wonder. Please check out the full video recipe below for easier understanding :)

2 Minute Chocolate Mug Cake – An Instant Eggless Chocolate Cake

The BEST 2- minute microwave chocolate mug cake you will ever make!

There. I said it. This, guys, is seriously the best chocolate mug cake you will ever make. For years, I have tried following a lot of recipes I have seen out there but nothing was good enough for me. They were always never enough sweet or never enough moist or sometimes even never enough chocolate!! I tried and tried, ever since the microwave mug cake thing started a few years ago. But it just never worked for me.

Then I saw this video by Trisha Yearwood for making a chocolate mug cake and that cake looked really moist, atleast in the video. I made it the same day and eventhough it was not as 1moist as I wanted it to be, it was still one of the better ones I had made. So I took that recipe and have been modifying it for the last one year or so and voila , here is my recipe for an instant chocolate mug cake! And yes, it has lots of chocolate, it is moist, it is sweet, it is everything you want in a chocolate cake!!

What are you waiting for? scroll down to the recipe and make it right now. Trust me, you wont regret it!

I think the secret to this recipe is half a shot of freshly made hot espresso and chocolate and coffee extracts. It adds some much needed moisture to take care of any dryness in the cake and coffee always elevates the chocolate flavor to make it so much more divine.

I always use Nielsen Massey brand of extracts, whether it is Vanilla extract, Coffee extract or Chocolate extract. Not only does this brand have a wide variety of extracts, I find the flavors to be so much more concentrated than other brands. Do you ahve a favorite brand that you use? I would love to know!

2 Minute Chocolate Mug Cake – The Recipe

  • ¼ cup all purpose flour
  • 2 tbsp cocoa powder
  • ¼ cup sugar
  • a pinch of salt
  • a pinch of baking powder
  • ½ tsp vanilla extract
  • ½ tsp coffee extract
  • ½ tsp chocolate extract
  • 2 tbsp oil
  • ½ shot of espresso or mix 1 tsp instant espresso powder in ½ oz hot water
  • ¼ cup whole milk
  • ¼ cup semi sweet chocolate chips

Add all the ingredients, except for the chocolate chips, in a microwave safe mug, in the order listed. Whisk well, till there are no lumps of flour and sugar. Top with the chocolate chips and microwave for 90 secs. Wait for a few seconds before you dig in. Be very careful as it will be very hot inside and you may not know it. Best when served hot.

I’m sure its much better than making and eating instant noodles whenever a snack attack hits them.

Our Favorite Video:

And even more easier to portion control the dessert cravings.

This recipe is adapted from Microwave Chocolate Cake but I made it into an eggless one for the sake of kids as I do not want them to make a mess while breaking up the eggs.

There are so many flavors to play with this cake especially.

Earlier I was using Vinegar like in this Eggless Chocolate Strawberry Mug Cake but since the kids started hating the smell of it, I adjusted the milk and oil accordingly.

You can also use buttermilk instead. Sometimes I add coconut oil and the aroma of the cake will be simply amazing.

If using coconut oil, leave out coffee powder and avoid using any kind of extracts or essence.

If you are looking for a healthy pick me up, you can check out this Eggless Matcha Mug Cake which also happens to be gluten free as well.
