  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 6 chicken breasts, cubed
  • 2 tablespoons curry powder
  • salt and pepper to taste
  • 500ml passata
  • 1 (410g) chickpeas, rinsed and drained
  • 4 tablespoons peanut butter
  • 50g fresh coriander leaves

  1. Add the olive oil to a large saucepan and brown the garlic for a few seconds.
  2. Add the diced chicken and cook over medium heat for 5 minutes, stirring constantly.
  3. Add the curry powder, salt, pepper, passata, chickpeas and peanut butter and simmer over low heat for about 25 minutes.
  4. Add coriander (keep some sprigs for garnish) and cook for 5 minutes. If the sauce is too thick, add a few tablespoons of water.
  5. Adjust the seasoning, garnish with coriander and serve immediately with white rice.

Tip

If you do not have peanut butter, you can do it yourself: put 200g of peanuts in a blender and blend until you get a smooth paste.

South African Piri-Piri Chicken

Basically, it’s a delicious South African chicken recipe which features chicken simmering in a spiced sauce of onion and lemons.

It’s actually quite similar to the Poulet Yassa recipe I wrote about here, and even easier to make!

Just whisk together some spices, lemon juice, vinegar, garlic, olive oil, and chopped onion in a large bowl. Add the chicken, give it a toss, and put it in the fridge to marinate.

When you’re ready to cook, heat a skillet over medium-high heat, brown the chicken on both sides, pour in the reserved marinade and then transfer to a hot oven to simmer and bubble until the chicken is done.

You’ll want to use a pan that is safe to put in the oven. I highly recommend using a cast iron skillet for this piri piri chicken recipe, like this one that I use.

The spices are all totally normal things, too – nothing you would have a hard time finding in your own spice cabinet (or at the local grocery store).

This recipe calls for salt, black pepper, cayenne pepper, chili powder, paprika, oregano, and ground ginger. Compared to a lot of the recipes I post, this is a VERY normal ingredient list.

The chicken piri piri comes out juice and tender, while the marinade cooks into a perfect little pan sauce. Serve with your grain or starch of choice and dig in!

Popular across West Africa, chicken yassa coaxes deep flavor from a handful of simple ingredients: smoky grilled chicken, sweet caramelized onions, tangy lime, bright ginger and spicy Scotch bonnet chile. This version comes from “The Fonio Cookbook” by chef Pierre Thiam (Lake Isle Press, 2019). Mr. Thiam, who was born and raised in Dakar, is the chef and owner of Teranga, a West African restaurant in Harlem. His recipe calls for bone-in chicken legs, but, in southern Senegal, where the dish originated, you might be served other chicken parts, fish yassa or even lamb yassa. The cooking method is flexible: The chicken develops the best smoky char when grilled, but will still be delicious seared in a grill pan or cast-iron skillet. &mdashAlexa Weibel


Recipe Summary

  • 1 cup roasted peanuts
  • 1 tablespoon finely grated ginger
  • 3 garlic cloves, crushed
  • 1 chicken bouillon cube
  • 2 teaspoons paprika
  • 1 1/2 teaspoons onion powder
  • 1/2 teaspoon cayenne
  • 1 pound skinless, boneless chicken breast, sliced crosswise 1/4 inch thick
  • 1/4 cup canola oil
  • Kosher salt
  • Pepper
  • 16 wooden skewers, soaked in water for 30 minutes

In a food processor, pulse the peanuts until finely chopped. Add the ginger, garlic, bouillon cube, paprika, onion powder and cayenne and pulse until a coarse and crumbly mixture forms. Spread the peanut mixture on a large plate.

Rub the chicken all over with 2 tablespoons of the oil and season with salt and pepper. Thread the chicken onto the skewers and press into the peanut mixture to coat both sides. Arrange the skewers on a plate. Let stand at room temperature for 30 minutes.

In a grill pan, heat 1 tablespoon of the oil. Cook halfof the chicken over moderate heat, turning carefully, until deep golden and the chicken is cooked through, about 5 minutes. Repeat with the remaining oil and chicken. Serve hot.

The chutney chicken is a South African classic and a favourite in many homes. The idea of sticky chicken thighs with flavourings is always a great one.

Ingredients

  • 1 tbsp olive oil
  • 6 tablespoons of mango chutney
  • 1 small onion that is finely chopped
  • 6 tablespoons of mayonnaise
  • 1 garlic clove that should be finely chopped
  • 1 red chilli that is deseeded and chopped finely
  • 8 chicken thighs. Make sure to keep the skin on and the bone in
  • 1 tablespoon of Worcestershire sauce
  • Green salad to use when serving
  1. The oven should be heat to 392 F.
  2. Heat oil in a frying pan on medium heat.
  3. Cook onion, chilli and garlic for a few minutes until they are soft.
  4. Stir the chutney, mayonnaise and Worcestershire sauce.
  5. Taste the mixture and season.
  6. Place the chicken pieces on a baking tray lined with foil.
  7. Spoon over the chutney mix.
  8. Roast in the oven for 40-45 mins until cooked and sticky.
  9. Serve with a green salad.

You can be sure that this will be the best mayonnaise chicken you will ever taste. It is not surprising that it is known as the 'ask for more hands' chicken since that is exactly what you will be doing once you have a taste. Here is how to make the best chutney and mayo chicken.

Ingredients

  • 4 chicken leg quarters (or 8 chicken legs)
  • Salt and pepper
  • 1 tablespoon of oil
  • 1 onion, nicely diced
  • 2 cloves of minced garlic
  • Red chilli flakes. This is an optional ingredient to use if your chutney is not spiced
  • ¼ cup of water
  • 1 tablespoon of Worcestershire sauce

  2. Put the chicken in an oven-proof casserole dish that is well greased.
  3. Season it generously with pepper and salt.
  4. Heat some oil in a medium skillet over medium-high heat.

Recipe for Chicken Yassa from Senegal

step 1 : marinade the chicken

The best way to do is to marinade the chicken one day before. Make the marinade sauce by mixing 2 tablespoons French mustard with 4 tablespoons of peanut oil and 6 tablespoons of lemon juice. Cut the chicken into smaller pieces and use ¾ of the mix to marinade the chicken. Keep the rest of the marinade for the next day. Once the onions are soft you should add the chicken stock cubes and 2 cups of waters and soften, add the chicken pieces, stock cubes, 2 cups of water and the dried chili. Now cook for around 45 minutes while stirring occasionally. Taste with a spoon to see if extra salt or pepper is needed.

Step 6 : Serve the chicken Yassa with Rice or Sweet Potato
